Dai cooking is one of Yunnan's prized minority specialties (around Jinghong). It features bold and intriguing combinations of unusual flavours, principally hot and sour. The latter is achieved by using raw papaya. Yunnan is famous for its wild mushrooms found in the mountainous, forested parts of the province. We could also add to this list the bounty of wild herbs and edible ferns, many of which are unique to Yunnan, or even to a particular region of Yunnan. This dish is prepared with lengths of Chinese cabbage and dictyphora mushroom, which is commonly known as bamboo fungus or veiled lady. It shows a firm understanding of how mushrooms should be treated.

I just fell silent as I swiped this home-made tofu into the small pile of rust-coloured powder again and again, trying to name all the spices. Whatever is in it, it鈥檚 hard to resist.

 

Flowery Pastry
Yunnan is full of lush foliage and blooms, so it鈥檚 no surprise that flowers are a key ingredient in the cuisine. The flower pastry, a delicate flaky treat with a perfumed centre of sugared rose petals, is the most famous of regional desserts.

Black Lamb Soup
In autumn and winter, it is a trend to enjoy this speciality hotpot in Lijiang. The mutton used in this has fine muscle fibre, tender meat, delicious taste and little sheep smell. Also, it has high nutritional value and high protein content and low fat and cholesterol content, which helps in nourishing Yin, toning Yang, strengthening the body and improving the immune system. This soup is carefully boiled for 4-5 hours using a secret herbal formula.
