Takeshi is the General Manager of Gang Gang Restaurant, a cozy eating place over their famous shop which offers all kind of delicatessen, wines selection and their famous bakery products. We come along with Takeshi to talk about his Restaurant and the Gang Gang concept.

What’s the story behind Gang Gang? How did you end up here?
 
My partner and I, along with a local Tianjin friend of ours, decided early on that there was an opportunity for a high-quality bakery here. But neither my partner nor I could speak any Chinese! We ended up at Tianjin University studying Chinese for a year to get our feet under us. After that we ended up at Tianjin Institute of Technology, selling curry out of the school cafeteria for a year. Then in 2005 we were finally able to set up the bakery in Olympic Mansions and later the restaurant here.
 
It took about two years to get this restaurant up and running. It was hard to find and then train chefs. I can cook the dishes myself but then that distracts from the other work of running the restaurant. So the time and effort needed to get this place going strong was longer than I had expected.

Could you tell us a little about the restaurant? What inspired you to open it?
 
I was initially involved in catering business when I lived in Japan. We came here with the idea to start a bakery but then decided to open our second branch here as a market and restaurant. We feature mainly western dishes here, as well as a large selection of wines, both foreign and domestic. My partner and I set the menu and I pick the wines based on my personal preference. Wine tasting is a particularly enjoyable hobby, I think!

Can you tell us about some of the activities or events you hold here?
 
Recently as I’ve started to grow the wine collection at Gang Gang, we began to hold wine tasting events. My Chinese is just passable, so I’ve started by marketing these tastings to our Japanese clients, particularly housewives, who will come in the morning before we open for lunch. I really want to start holding tastings for Chinese customers as well, but for that I need to first train some of my Chinese staff, so that they can run the event and explain the tasting process on their own.

What can you tell us about some of your favorite wines?
 
There’s a domestic Chinese wine, Tianzai Chardonnay, recommended to me by our wine supplier which is really lovely. It’s great to see how wine production here is progressing. Personally, I like French wines are the best but they’re so expensive. There’s much better value to be found from wines from South America, Canada, etc. With wine, price can definitely be deceiving; expensive wines may certainly not be as good as other cheaper options.

What’s the short term outlook for Gang Gang?
I think with our current state we’re really going to try to expand the bread and wine businesses. We need to start by standardizing our bread operations so that we can expand to other locations more easily. With wine it’s more important that we train several staff in the art of tasting and selling wine so that they can advise customers.

Tell us a bit about your personal experience living in Tianjin. How have you grown in your time here?
 
During my time in Tianjin, I’ve gained a great appreciation for the people and culture of China. Everyone here is very welcoming and it’s been nice to see the city grow so much. The pollution situation seems to be getting much better. 
 
In my work, I’ve learned how to be a more patient manager and how to communicate better. I really consider myself a friend or mentor to most employees, training and teaching them, encouraging them to do the best at their jobs. When I was younger I was always afraid of making mistakes and dealing with problems, but I’ve come to realize that this is all a normal part of the job. I’m much better at staying calm and resolving issues than I was before.

What culinary advice would you give to our readers?
 
When you don’t understand the difference between good and bad, high quality and low quality, everything tastes the same. It takes a keen appreciation of all aspects of food to really understand what quality is. For example, I’ve come to learn how the smell of our bread – stronger, more pungent than other breads - indicates quality and freshness. Not just our bread, but rather all of our food is produced to the highest standards of quality. This includes products in our supermarket, raw vegetables and meat, etc. which we select for freshness and quality. This is what strengthens our reputation and creates a loyal group of customers.
